When I discovered how easy it was to make vegan ice creams at home my life got infinitely more delicious!
All you need are frozen bananas and a food processor and you’re good to go. I recommend that your bananas are super-ripe as the riper they get, the sweeter your ice cream will be. Let them ripen, then peel them and freeze them in a container. When you’re ready to make ice cream, slice the bananas and blend away. The beauty of using frozen bananas is that they make your vegan ice cream creamy, but also can replace any additional sugars.
To make banana ice cream a food processor is best, however you can do it in a blender as well. If using a blender, simply let your frozen ingredients sit at room temperature for 5 minutes before blending. You may need to add a little more coconut milk to get it going.
Chocolate Peanut Butter
Dairy-free, Gluten-free, Refined Sugar-free, Vegan
Yield: Serves 1-2
Ingredients:

2 frozen bananas, peeled and sliced

2 Tablespoons full-fat coconut milk
-
5 teaspoons raw cacao powder
-
2 Tablespoons natural peanut butter
-
pinch of sea salt
Instructions:

Place all ingredients in a food processor and process until smooth, stopping to scrape down sides.

Papaya Lime
Dairy-free, Gluten-free, Refined Sugar-free, Vegan
Serves 1-2
Ingredients:

2 frozen bananas, peeled and sliced

½ cup chopped papaya, frozen
-
zest of one lime
-
juice of half a lime
-
1/4 cup full-fat coconut milk coconut cream
Instructions:

Place all ingredients in a food processor and process until smooth, stopping to scrape down sides.

Strawberry Coconut
Dairy-free, Gluten-free, Refined Sugar-free, Vegan
Serves 1-2
Ingredients:

2 frozen bananas, peeled and sliced

¾ cup frozen sliced strawberries

¼ cup coconut cream
-
dash of pure vanilla extract
Instructions:
